The first time I noticed a very high engine temperature, was in my first highland trip when I was driving up a very steep mountainside.
Ok, that means you never had a Temperatur over 95° befor.
2.)
The temperature was close to 100°c
100° is'nt really dangerous for the Engine, when that happens usually the Fan cools down the Engine in a few minutes.
Question : Did the Fan work properly a the moment you had this 100° problem?
Sometimes the magnetic Clutch fails, you can check that clutch by give direct 12V to the two cables backwards of the clutch (little black round connector).
Power ON = Clutch closed

I suspect the thermostad to be (maby) in bad shape, the only thing I could do to lower the temperature, was to turn on the heaters.
Do you know if the Iveco termostads are available in diffrent types, (degrees) ?
You can check by boiling the Thermostat in a Pan with a Thermometer, the opening °C is printed at the Thermostat.
The Engine should work well with the standart Thermostat, we had this discussion last year here at the Forum, Erich told something about a FIAT Ducato Part - but thats not the way you should go, with that Part your Engine will never reach his working Temperatur, he would run cold all the Time. <img src="http://www.viermalvier.de/forum_php/images/graemlins/grin.gif" alt="" />
